Flamed Citrus Peel Garnish

Instructions

Cut a thick section of skin about a silver dollar size from the fruit.
You want to cut it so it is 3/16 of an inch at its widest point because a ¼ of an inch is too wide.
There should be a little bit of pith in is, just in the center.

Hold the lighter to the skin side over the cocktail for about 7 seconds.

WIth the lighter still lit over the skin, squeeze the peel.
